Healthy Chips!

Continuing JRE’s long and storied tradition of recipeblogging, here’s a recipe for dead-easy (and healthy!) home-baked potato chips. (Zac came up with this one.)

Ingredients (serves 4)

  • Potatoes - 8 (decent-sized)

  • Olive oil - 3 tsp

Spicy rub ingredients

  • Seasoned salt - 2 tsp

  • Mixed dried herbs - 1 tsp

  • Hot chilli powder or chilli flakes - 1 tsp

  • Paprika - 1 tsp

  • Black pepper - 12 tsp

Method:

Slice the potatoes into chips. Chuck ‘em in a large bowl, with 3tsp of olive oil and 2tsp of water. Cover and microwave for 3 minutes on high.

(This is the really clever bit. The water and oil evaporate in the microwave, and the chips end up coated with a thin layer of oil - it’s just as reliable as tossing them by hand; uses less oil, so you can claim it’s good for you; and the chips end up pre-cooked, so they don’t need to bake for as long.)

Mix the spicy rub ingredients together in a small bowl, and sprinkle over the chips - toss thoroughly until the chips are well coated.

Chuck ‘em in the oven for 30-40 minutes at 200 C - turning once, after 15-20 minutes - until golden brown and crispy.
